Avocado Toast with Radish Microgreens

Serves: 4

Avocado toast is such a satisfying meal, especially when you add an on egg on top! The creamy mashed avocado is a perfect complement to the crunch of the toast and the over easy egg makes this dish feel decadent. Adding sliced tomatoes gives the breakfast a wonderful freshness and the radish microgreens give hint of spice that perfectly rounds out this stunning breakfast. This dish would be perfect to serve to friends and family…or you can quietly pour a cup of hot coffee, take your plate outside and watch the sun slowly come up.

Ingredients:

  • 4 Slices of bread

  • 2 Tomatoes, sliced

  • 4 Eggs

  • 4 oz Radish Microgreens

  • 2 Avocado

  • 1 Lemon

  • 1/4 tsp Salt

  • 1/8 tsp Pepper

  • Siracha (optional)

Directions:

Start by toasting the bread. While the bread is toasting mash up the avocado then stir in the juice of 1 lemon, salt and pepper. Evenly divide the avocado mixture over the four slices of toast.

Warm up a pan for the eggs and add a tsp of olive oil. Crack eggs into the warm pan, sprinkle with a pinch of salt and pepper. Cook eggs until they are over easy, or to desired consistency.

Top the avocado toast with sliced tomatoes then add the cooked egg on top. If desired, drizzle with a small amount of siracha then top with radish microgreens.

Serve immediately.
